Even before we had a rough morning on Saturday, I had already planned to make cupcakes with the kids. I don't get a lot of time with just the kids and I thought this would be fun. I also wanted to try something new - homemade cupcakes. So I had a plan:
1. Kid's cupcakes - I got box cake mix, Saturday was chocolate, and canned cream cheese frosting. Connor and I made the cupcakes while Addison slept and then Braylie and her parents came down to decorate them and watch the Ranger game.
2. "Adult" Cupcakes - I found a recipe for pumpkin spice cupcakes with cinnamon cream cheese frosting and decided I would give it a try. I was honestly surprised at how easy it was. They were very easy and did not take any more time than using a box. They were a little heavier and tops stay flat so they are easy to decorate. They were really good. I was so excited.
I am taking volunteers if anyone would like a cupcake since when all was said and done we made 48 cupcakes. I would say cupcake therapy was a great success.
